A little Saviour for new mums

New mum of two here. My time is very limited. I thought I had it tough with one baby, but now I understand why mums of two or more would say ‘ wait until you have two’ yep, I totally get it now!

I am so focused on my boys and juggling life with a newborn that it’s been super hard for me to find time to eat healthily during the day, I find squeezing in breakfast particularly difficult as the morning it is go go go. That’s why I have been loving using my new Vitamix Ascent– as it allows me to make healthy juices, smoothies and meals in a flash, which I can then enjoy once I have a free second.

It’s been handy as I have been whipping up juices and smoothies the night before when my boys are settled. I love using the blending cup, I literally pop all the ingredients in, hit the smoothie setting, walk away and come back to a perfectly blended drink. It’s the size of my usual drink bottle, so I usually pop it in the fridge to enjoy the next morning, as it’s easy to drink while I am feeding or thrown in my bag while I’m off to the park or work.

I also love getting Aston involved, he loves being in the kitchen so I give him small jobs that he can do which makes him feel important and appreciated ( this has been key with the new bub in the house) he puts all the ingredients in the Vitamix and then turns the dial to watch it make incredible meals.

Here is one of my favourite green juice recipes that I have been enjoying. It’s super easy to make and packed with nutrients to keep me going throughout the day.

½ cup (120 ml) water

1 cucumber, quartered

1½ stalks celery, diced

2 apples, seeded, cored, quartered

2 cups (60 g) kale, chopped

1 inch (3 cm) fresh ginger root

Place all ingredients into the Vitamix container in the order listed and secure lid.

Select Variable 1.

Turn machine on and slowly increase to the highest speed.

Blend for 30-45 seconds, using the tamper to press the ingredients into the blades.

Strain through a filtration bag.

Store in refrigerator. Use within 2 days

I am a big fan of almond milk and my Vitamix makes the most incredible fresh almond milk (without all the thickeners and gums) that you find in store bought almond milk. The Vitamix blender makes it super smooth. Other favs is my famous sugar-free banana bread and lemon sorbet! YUM.
